    My favorite popsicle is banana My favorite summer treat is a cake my mom always made. It’s super simple. Take an angle food cake and slice it in 3 horizontal layers. Whip 2 cups whipped cream. Lay one layer of cake on a plate. Frost with cream. Place sliced strawberries on top Repeat with layer 2 Add the top layer and frost the entire cake with the cream. Finish with whole strawberries scattered on the top and bottom of cake. So refreshing. The sugar in the anglefood cake is just enough. I do not add any to the strawberries or cream but if you prefer sweeter you can. As an alternate you can do one layer strawberries and the other layer drained crushed pineapple in its own juices. Enjoy

    One of my many favorite summer treats is a great recipe I got out of an old cookbook. It’s called trifle and I love to make it with all the fresh summer berries. Only a few ingredients needed: angel food cake, berries, whipped cream and a sauce you make- cup of berries, 1/2 cup sugar, 3/4 cup water, bring to boil over medium heat, reduce heat to low, continue cooking until the mixture thickens. Then all you do is put your 4 trifle ingredients into layers in a large bowl, preferably a glass bowl so you can see how pretty it is from the side. Start with a layer of cake torn into pieces, next pour a little sauce over the cake, add some berries, add whipped cream (I add a lot!). Continue layering in that order until you reach the top of the bowl. Looks gorgeous and is soooo yummy!

It is a banana split cake. Using Neapolitan ice cream with a gram cracker crust and layers of fudge sauce and thin sliced banana in between layers. Topped of with whipped cream and a cherry.

    Cranberry Lemonade
    3/4 cup sugar
    2/3 cup lemon juice
    3 cups cold water
    1 cup cranberry juice (any flavor, currently Cran-Pineapple is my favorite)
    In a small saucepan, combine sugar and lemon juice. Cook and stir over medium hear until sugar is dissolved. Pour water and cranberry juice into pitcher, add lemon juice mixture. Stir well. Refrigerate until chilled. YUM!

    My favorite treat is the vanilla ice cream we make every 4th of July!
    3 cups milk, 2 cups whipping cream, 2 eggs, 1 1/4 cups sugar, 1 Tbsp vanilla and 1/4 tsp salt.
    Mix all together well and freeze in an ice cream maker.
    Optional: add fresh fruit at the end of churning. Yummy with strawberries or peaches!

    A once a year favorite is the Chocolate Mess served by Market Place in Springdale, AR. It has rich vanilla ice cream, lots of chocolate fudge sauce and whipped cream. The tall sundae glass is frozen and then dipped in chocolate fudge sauce before filling with the incredible ingredients. Sprinkle on some nuts and top with a ????. It comes to the table sitting in a saucer of chocolate that ran down the side of the glass. Now you know why I only have it once a year!!

    Strawberry shortcake!

    I take a pound cake premade at Wal-Mart, slice it into 8 slices. Take a small Pyrex dish (I believe it’s the 6 x 6) and put 4 slices of the pound cake in the bottom, take half a tub (large tub) of Cool Whip and spread across the top, then slice strawberries and put over the top and then do the same thing one more time! Makes a quick and easy dessert that takes great!

    I love …STRAWBERRY HEAVEN
    1​​loaf angel food cake (Sliced)
    8 ounces​cream cheese (Softened)
    8 ounces​Cool Whip (Thawed)
    1/2 cup​​powder sugar
    1 teaspoon​vanilla
    quart​​strawberries (Sliced)
    24 ounces​strawberry glaze
    8 ounces​Cool Whip

    Slice angel food cake as thick as you like. Cover bottom of 9 x 13 pan.

    Stir together cream cheese, Cool Whip, powder sugar and vanilla. Spread over the angel food cake.

    Slice strawberries and mix with glaze. Spread on top of cream cheese mixture and follow cover with Cool Whip. Refrigerate.

    I really married well…. my husband and I share a favorite summer treat. Creamsicles! They are a mix of orange sherbet and vanilla ice cream on a stick just like a popsicle. I also stock orange sherbet for a little after supper treat. We always laugh and wonder if we had the same ice cream truck in our neighborhoods when growing up??? Love your popsicle stacklets.     No Churn Ice Cream

    14 oz can Sweetened Condensed Milk
    2 tsp Vanilla Extract or 1tsp Vanilla Bean seeds
    2 cups Heavy Cream
    pinch Salt

    9×5 metal loaf pan–chill in freezer at least one hour

    1. combine condensed milk, vanilla and salt in a medium bowl. Set aside.

    2. Using hand mixer, whip heavy cream until stiff peaks form.

    3. Fold 1/2 of whipped cream into condensed milk mixture.

    4. Add condensed milk/whipped cream mixture to remaining whipped cream & fold.

    5. Whip on high less than 30 seconds.

    6. Pour cream mixture into chilled loaf pan and return to freezer, uncovered for approximately 45 minutes. (I line my loaf pan with heavy weight aluminum foil to make scooping easier without damaging the pan, and spray very lightly with non-stick cooking spray)

    7. After freezing for 45 minutes, add any “Mix-ins” you might like.

    8. Cover losely and freeze an additional 3+ hours.

I know, it’s too tart for most people but I can remember walking around my grandmother’s garden munching on a stalk of rhubarb when I was little.
