Papertrey Ink Countdown – Boards & Beams
I’m so excited to give you a sneak peek of one of the new Papertrey Ink stamp sets! The set is called Boards and Beams and it’s going to become your solution for every housewarming and hostess gift you need!
I’m going to show you how one of my favorite homemade treats fits perfectly into the Papertrey coffee bags. By simply dressing up the coffee bag with a belly band and elements from the Boards and Beams stamp set, you’ll have a delicious and delightful “welcome to the neighborhood” gift.
You’ll need two strips of coordinating cardstock. One measuring 3″ x 11″ and the other measuring 3 1/4″ x 11″. Adhere these two pieces together and score the strip at 1 3/4″, 3 3/4″, 7″, and 9″.
Fold the belly band on the score lines and adhere the two ends together with sticky tape. I stamped the house in Palette Burnt Umber and colored it with Copic markers. The house reminded me of the weathered farm house where my best friend from high school lived. So I decided to color it red. The house has such a classic look that it would work in almost any color.
Now for the best part… my favorite Lemon Pecan Biscotti. It is so simple and yet so delicious! Whenever you give this away, make sure you include the recipe… I’ve tucked the recipe insdie the bag, but it would be great tied on as a tag as well! Here is the recipe:
1 pkg lemon cake mix
1 stick marg or butter (melted)
2 large eggs
1 Cup flour
1/2 Cup chopped pecans

Preheat oven to 350*. Combine cake mix, margerine, eggs, pecans, and flour in mixing bowl and blend with an electric mixer on low until well blended, 3-4 minutes. Stop to scrape down the sides with a spatula as needed. The dough will come together as a ball. Line a baking sheet with parchment paper, and transfer the dough onto the paper. With floured hands, shape the dough into a rectangle about 14″ long by 4″ wide, slightly mounded in the center. Place the baking sheet in oven. Bake biscotti for 30-35 min. until toothpick inserted in the middle comes out clean. Remove from oven and let cool for 10 min. Using a serrated knife, slice loaf on the diagonal into 3/4-1″ thick slices. Carefully turn these slices onto their sides and return to oven. Continue to bake for 10 minutes. Turn off the oven and let the biscotti remain in oven until they are crisp, 30-40 minutes more. Remove from oven and allow to cool completely for 2 hours. Store in an airtight container at room temperature for 2-3 weeks.
