Sweet Potato Souffle
I made Sweet Potato Souffle for my office Christmas party earlier this week and it was a hit! Since I mentioned it as my favorite Thanksgiving food I’ve had a couple requests to share my recipe. So here goes…
5-6 lbs. sweet potatoes
3 eggs
1/4 cup white sugar
1/2 cup melted butter
1/2 cup half and half
1 tsp vanilla
Mash the potatoes and mix all ingredients together. Put mixture in the bottom of a 9×13 pan.
1/2 cup butter
1 cup chopped walnuts
1 cup packed brown sugar
1 cup flour
Melt butter and add walnuts, brown sugar, and flour. Mix until crumbly and crumble over the top of the sweet potato mixture. Bake at 350 degrees for 40 min. Add marshmallows with approximately 15 minutes remaining and remove from oven when marshmallows are golden brown. YUM!!
